Almost every other corridor from Canada ends at a bank account. Kenya does not. A great deal of ordinary Kenyan money moves through M-Pesa, and for many recipients the phone is the account. Cost behaves differently at different sizes on this corridor, and that is worth knowing before you set a habit. A small weekly M-Pesa top-up and a single large payment for a term of school fees are not the same transaction, even though the app treats them identically.
The useful test is always the same one: ask what the recipient ends up holding in shillings, not what the fee line says. On any Kenya route, a provider with no visible fee and a wide rate can hand over fewer shillings than one that charges you plainly and converts closer to the market.

How the shilling rate is set

The rate shown on the confirmation screen is the rate applied. It is fixed when you confirm, which means the shilling figure you read is the shilling figure that reaches Kenya, whether the money is going to a wallet or to a bank.
That is most useful when somebody at the other end is expecting a precise amount. A school bursar, a hospital, a land seller. You can quote the shillings with confidence instead of promising to make up any shortfall later.
