Who sends money from Australia to Denmark

Whether that cost bites depends entirely on the account. Plenty of Danish business accounts hold euro without blinking, and a Danish supplier invoicing in euro is simply paid. A personal account that only ever deals in krone will convert, and the rate for that is set in Copenhagen, not by Grey.
So the test is the recipient, not the amount. Ask what currency their account is comfortable holding before the first transfer. If the answer is euro, this route is direct. If the answer is krone only, you are choosing between a visible conversion here plus a bank conversion there, and an Australian bank wire with a fee and a margin you never get to see itemised.

How the fixed rate works on a Danish transfer

The rate is shown before you confirm and fixed at that moment, so the euro figure on screen is the euro figure that reaches the Danish account.
The krone figure is a separate question and Grey does not control it. The krone has been held close to the euro for a long time, which means the movement between the two is usually modest, but a receiving bank still applies its own rate and its own charge when it converts, and modest is not the same as nothing.
